Anything with just squares, like a nine-patch, perhaps in a lap quilt size (or baby quilt) is a great first project. I love nine-patches -- easy, quick, lots of variety possible. I started with little mats that are now on counters and coffee table around the house. Basically read a bit about improv, started cuttinf, sewing, recutting, etc. Don’t worry, it’s only fabric!! Dive in!!
