Personally, I'd season and stir fry the shrimp instead of making tempura. There's room for improvement, but overall you really put effort into working with what you had!
If I try what I did again I’m going to have to try your idea for the shrimp, it sounds more appropriate and tastier! The tempura idea is more oriented for udon than anything else
