Of course there are possible problems with ingredients! But my point is that there are big, known problems staring us in the face and worrying about cellulose gum is missing the forest for the trees.
Fair comment? At least I know a little more now.
I get your point about the energy density/fat/sugar of course - I fire down a bar of chocolate for quick calories sometimes. Even the best chocolate would have those issues ascribed to UPF now.
Processing is a tool that has been used by food companies to make food you can't resist and keep it in front of you 24/7.
That's why ultra-processed food is bad.

Extruding a corn flake from a slurry of boiled corn, adding sugar, drying and flattening somehow makes it more irresistible than a simple grain of corn = UPF.
All you need is a microwavable container, a cheap microwave and a cheap rice cooker. All the rest is optional.
But it's not to avoid processing. It's that variety and intact nutrients are the best hedge against uncertainty. Here's my take:
