Given the ability to reconfigure the drive train on an electric car in such a way that a large area at the front of the car for an engine is no longer necessary, why do we still have every EV made in the same form factor as an ICE vehicle?

Plenty of ICE examples without an engine in the front too.
In essence, you’d end up with a van? Like VM Transporter microbus (T1-T3 with the engine in the back)? Essentially the Canoo EV?

But the majority of cars are just boring as hell. Manufacturers are not interested in taking risks. It's like Hollywood churning out another remake.
