I had finally come to terms with my inability to properly stretch pizza dough. Just one of those things I can't do. Move on. Now I see this and need to jump into a mine shaft.
I make a big batch of dough and freeze it for the days that I CANNOT deal with the grocery store. It’s usually pizza Friday - sometimes it’s pizza Sunday. Wishing you good pizza ahead.
If it makes you feel better, that’s not pizza dough. It’s a special silicone dough that’s super stretchy and unbreakable. The person has mad skills, though!
I just can't get the crust thin. If I try rolling it, it pulls back. If I try flipping it around my fist, one bit gets really thin and the rest doesn't and then it tears. I'm just so bad at it.
I'm sure this will be sneered at by purists, but: I roll the dough out onto a silicone baking mat. It sticks to the mat enough that it doesn't pull back. Then I put the mat onto parchment paper, so it doesn't stick to the peel, and cook them on the the pizza stone
