Why not a flying drone for the same thing. In conjunction with satellite the pilots are safe.

In reality, there are quite a few different ways by which the payload can be delivered/ launched.
Or like the old movies, with behind moving...
This is by the way in no means a revolutionary design and is actually already in testing by other countries...
Still not sure how the wind shear would work... Unless it's the slowest jet in history.
Btw, these type of design ideas movies rarely depict a final product or procedure mechanism. It is mainly for concept demonstration.

wondering if it wouldn't be better to have the belly open instead of these absurd side doors and 'drop' them out at an angle to give them a little head start at correcting their trajectory

Launch drones from a forward flight, even at low speed, would need to have gyros fitted. Then bombs guidance systems.
