I will work with them forever (especially now that I know they probably won't hit the deadlines I give them, so I give them a fake one that's early and can easily say, "Sure, take another week. No worries." Shhh... don't tell them :)).

If you want to (or already are) freelancing, it's worth asking yourself: what are your 2 of 3? Knowing that and really leaning into those strengths can take you a long way. And, of course, working toward all 3 is never a bad idea.
Typically the first deadline is for the draft, so any rewrites the author wants to do is part of the drafting process for them.
Once the editor goes through a piece and turns it back to the author, the time for rewrites depends on the length of the piece, how much work is needed, pub date, etc.
