I respect people who complain about IPAs because they can't find Belgians or stouts or whatever at the liquor store, just mostly roll my eyes at people who use it as a dismissive catch-all term for craft beer.

I've heard "IPA" in that sense used by the sort of people who view alcoholic beverages as a means to an end, and by people who don't like beer to begin with but have been dragged to craft brewery taprooms.

My issue with the ubiquity of IPAs is that there's a lot of other good styles i want breweries to experiment with more often, while the closest thing to an IPA that i've ever actually enjoyed was Sierra Nevada Pale Ale (which i'm pretty sure doesn't count as an IPA)

IPAs are really easy to make. The hops covers up any fuckups in the beer. They also sell well. So small breweries that don’t have the process down to brew more difficult beers consistently (very hard!!) brew lots of IPAs.

I don’t know about that. Hopping schedules, matching flavors, etc is just has challenging as anything related to lagering or more malt forward beers. There’s a reason why breweries can’t make treehouse clones still
