I was just having this chat over on LinkedIn; I was able to uninstall by right-clicking on the icon on the start menu and selecting 'uninstall' The icon is now greyed out on Word.
Whether or not that's an option for your version of Word, you can use O&O ShutUp10++ to turn off that and a bunch of other intrusive stuff that Windows doesn't normally allow you to disable (like cortana).
I can see a patch to 'fix' that in the near future.
Can't have actual end users opting out of whatever the latest corporate brain-fart/deeply intrusive bullshit the execs are currently hyper-fixated on, after all!
are you on Mac or PC? I can't find any way to get rid of the cursor on Mac and it's driving me mad. May literally justify jumping to a PC for this reason alone.

I had to open a new file which apparently turned on copilot. Then close word. Open word again and then I got the Copilot section in the Options.
Thanks for the post so I could go find it to turn off!
