Renegade Platinum, Blaze Black 1&2, Storm Silver etc.
Sun/Moon are really good too if you want the convenience of having modern Exp Share for minimal grinding.
Heartgold/Soulsilver are popular choices, but can get grindy because everything is low-level

Pokerogue is an excellent twist on the pokemon format with some real teeth in the late game
Emerald is commonly considered the classic all-rounder
Alpharad's too many types hack is hilarious but very silly
emerald seaglass is easier but has a lot of quality of life improvements and is just gorgeous.
Vanilla game: Black/White (Best "modern" vanilla game)
Vanilla-style Romhack: Legacy Emerald
Best QOL Romhack: Radical Red
Randomizer: Sanqui .net (Pokemon Red with new Pokemon)
Console Romhack: Pokemon Grand Colloseum
High Difficulty: Run&Bun (Warning: VERY difficult)
If it's your first, build up to it and pick your favourite gen.
So even when you're wracking your brain over how to defeat it's difficult bosses; it takes minutes compared to hours to prepare a given mon.

Also, I recommend using rare candy cheat like nuzlocke streamers do.

Gym leaders are given some coverage so you can't just solo the electric gym with a single ground type.

Hack in rare candies if you want to skip grinding. I’ve come all the way around on that after having tried it myself.
Blazing Emerald is what I've gone with and just been having so much fun. It has party xp options to remove all the grind from it.
US/UM are tougher games though.

I'd recommend either the Gen 2 remakes or Gens 4-5 for a semi-streamlined yet "classic" feeling Nuzlocke, Gen 7 if you don't want to worry about grinding and Gen 9 to avoid random encounters.
or if you're really wanna test the waters try one of the later games since they would be easier so to speak. but those games have roaming open pokemon so you leeway with what you wanna catch.
You can have some extra fun with randomisers!
If it's a 1st, go for a game you're familiar with.
If above's not enough, you can randomize it.
It ain't enough? Rom Hacks are fine.
Still ain't enough of a challenge? Randomize the rom hack.
Oh, and for me, 4th Gen onwards aren't too grindy.
Romhacks are really varied but there's a lot of good ones! I'd recommend Pokemon Gaia, Emerald Z or Emerald Seaglass!
it's pretty common these days to use a cheat code to spawn yourself rare candies to avoid grinding
romhacks are a bit tricky to recommend without knowing your amount of experience with pokemon battlings additional systems (evs/ivs etc)

I have also been recommended that it’s okay to hack in a bunch of rare candies, regardless of the game, to help avoid the grind. If you lose a lot of moms, that’s a lot of grinding you’ll have to do.
Play Pokemon Tectonic
