local pasta place. i got half and half. the beef ragu with meat balls was soooooo fucking good but the carbonara was disgusting. that flavour was not it.
Did you have carbonara or "carbonara"? There's a world of difference between the cheesy ham dish that goes by that name these days and what a proper carbonara should be.
I've found that a lot of pasta places go with the modern interpretation of the dish, presumably because that's what people expect. I've to a traditional recipe that I got from my mum which is very nice, but you have to be careful when making it as it is easy to end up with pasta with scrambled eggs.
