I really want to enjoy Noita, but I can't wrap my head around it. I've booted it up 3-4 times for 1-2 hours each and it doesn't stick

IMO Noita is best played spoiled. The game is not well balanced for spoiler-free play unless you are an absolute glutton for punishment. Both the amount and value of obscure information in the game is staggering.

It took me like 50 hours before I got to the third level lol, too busy exploding myself in every possible configuration on the first two
