Lard is typically rendered pig fat. Tallow is typically rendered cow fat (or sometimes sheep fat).

There is a restaurant here that promotes its policy of no seed oils. I thought it was weird, but never looked up why it might think seed oils are bad/gross. Thank you for this very good research into the issue!

Thanks for this. I got turned off of various seed oils maybe 12-13 years ago after reading about partially hyrdrogenated fats. I try to use actual olive oil for salads and sandwiches and avocado oil for cooking. Not a thing I thought people would get weird about.

A big glass of canola oil every day is undoubtedly bad for you, but eliminating all seed oils isn't the answer.
