I can't imagine French onion soup made with red onion π€
America's Test Kitchen says to cook the onions in butter in a 400 degree oven for 2.5 to 2.75 hours. "until onions are very soft and golden brown" then they have you bring it to the stove top for another 20 minutes for further browning
