That sounds fair. You really weren’t expecting us to screw up your schedule for so long, so as long as the subathon continues through your vacation so we can get you the Twitch all-time record, we should be fine.
...alternatively, as this was a pre-existing trip planned long before the subathon and nobody honestly expected the subathon to run THIS long until it became a self-aware freight train:

I would rather you and your partner just go on your vacation and enjoy your well-earned personal time. But, if you feel like this is the best meathod to help fund things and keep the subathon going, then go for it.
Get some holidays. I mean holy shit you are on that since over 3 months! Let the timer run slower or stop it for the time being or something but no need to not have a bit of time for yourself.

I don't think we really care about breaking any records, we're just here to show our support and enjoy your content. You could pause the timer and take your vacation or run the fundraiser. I think most of us will be here either way. But you should take care of yourself first, we've run you ragged.

My thought would have been to just pause the subathon during your vacation time so y'all wouldn't have to worry about it and just relax
