Started Clair Obscur over the weekend, and should I shift to Performance mode? I'm finding there's a slight lag on parries/dodges — it's not ruinous, but the timing seems just a split-second different from what *feels* right.

Yes, I think the faster response helps, especially when you press that button at the very last nanosecond. If you get rid of film grain and chromatic aberration you also don't lose too much in the visual tradeoff.
My son is playing it and he really struggled to get the parry timing initially. He said it always felt later than you expected. There was an optional boss in the early level that he practiced on until he got it.
Are you playing on PS5? If so, yes, would absolutely recommend performance mode. Even aside from the parries, just the camera movement is much smoother, and I didn't notice any visual difference.
I’ve been playing in performance and wouldn’t even consider fidelity - the extra responsiveness is vital. But there are also a lot of weird hesitations and tricks in enemy animation attack timings - you do get used to it, but it’s definitely designed to throw you off a lot of the time.
I went to performance immediately precisely because I thought parries. Also my 42-inch TV is more than 2 metres from me so I’m definitely not gonna notice the visual difference.
I’m playing on PC so I don’t have full context for what performance mode entails but when I tried cranking up visuals and wasn’t hitting 60fps anymore I immediately wanted 60 back it kind of necessitates the responsiveness
in my experience it depends highly on the attack, it feels different for every enemy. some are very clear and some feel delayed or obfuscated without there being notable performance issues involved
