Full disclosure, I’m okay with some egg (I’m intolerant, so I can’t deal with an actual egg, but as an ingredient in noodles, it’s generally okay for me as long as it’s not enough egg for me to smell) and the ramen place does use egg in their noodles, but they have fully vegan options as well.
Yes, and in Japan especially one has to be flexible if one doesn't want to go hungry. There are several temples that have all vegetarian restaurants. They require reservations and aren’t cheap but another option in Kyoto.
Yeah, I read somewhere that bonito is just in a lot of convenience store stuff (not being specific unless you want) and I’ve decided that it doesn’t apply to wherever I am because sometimes you just need food. I also settled for western cuisine a couple of times in Tokyo, which I’m hoping to avoid.
