To be honest, I didn't know there was a rule to this. I wonder if this even might differ by country; do you think some of these "errors" are not introduced by using ChatGPT but rather by people (me) not knowing how to grammar?

Wouldn't say it's so much a rule as there being high rate of change in grammar adhering to Chicago Manual of Style/modern-web guideline, which treats an em dash as a tight piece of punctuation—no spaces on either side.
I'm sure many also just also do this and there'll be some false positives
