We want a mix of cultural and food forward travel ending in a few days of total relaxation on the beach ( but not crowded or party beaches). We also like to hike and do outdoor stuff. 🙏

That sounds similar to me 😄 Bangkok definitely has the best food. I attached my recs to help you get started with some ideas. Chiang Rai, Ayutthaya, Sukhothai all have amazing culture and history dating back to the 12-13th century.

For a non-crowded beach… it’s getting rare but Koh Lipe is 🤌🏻
