I don’t understand having content be available only after finishing the game. I’m not doing any of that. I’m done. I’m not looking back. I beat the boss I’m on to the next one.

The one from wet nurse
There’s one through a drop down puzzle on the way to Upper Cathedrail
Iosefka drops one when you get to her from Forbidden woods after Rom’s dead
And Arianna’s baby after the blood moon.
You still only get one ending per run. Now that I remember it's 4 playthroughs, the three endings and then the true ending where the nightmare is over.
I personally like it, I don’t always play the extra content, but sometimes when I’ve fallen in love with a game, it helps me ease out, instead of having an abrupt end. Before post game content I would rarely fight the final boss because I didn’t want the experience to end,
This really depends on if I'm enjoying a game. Most of the time I'm ready for something else. Sometimes I'll immediately look up what I can do post game.
I just put like 50 hours into this game and now it wants me to do more after defeating the big bad? It doesn’t affect the endings or anything else just extra lore and I’m tired.

Games where there is incentive or enjoyment to play for fun indefinitely (fighting games, roguelikes, etc) I am fine with it.
You see back a long time ago there wasn’t DLC content. Not every game was going to be perpetually added to.
So when you bought a game, you wanted it to have some sort of replayability.
It was a permanent object in your home and that unlocked content Extended the use
Then they say I can carry it over in new game+ and im like... maybe in 3 years when I get nostalgic and play again lol.
Because it heavily depends on the game.
Cut scenes s and other bits referencing previous play though.

DMC V does this but it's executed extremely well, and you are meant to play to game more then once.
