If I want to watch Andor because literally everyone says it’s one of the greatest television shows of all time, do I need to know all of the Star Wars bullshit or can I just watch it?

It's one of the greatest Star Wars television shows of all time. You can probably get through it without knowing or caring about the lore, but whether you'd want to is another matter.
I disagree there. I'd watch Rogue One after Andor.
Andor is a reset. It tells you everything you need to know. The only thing it doesn't tell you, and is probably helpful to know, is that it takes place before the original Star Wars.
No prior knowledge needed other than the bare basics that you probably already know from social osmosis.
It is a science fiction setting in case that is a deal breaker.
since rogue one came out before but tells the story of right after, and is also otherwise something you can just watch, either order would work, or you could just do andor
i never saw any of the newer movies until after i watched the first season of andor. those you can miss
