Gambling on a lengthier baking pilgrimage today has paid off in spades. I've come away with a large bag full of goodies, including an outstanding passion fruit meringue Danish which sadly didn't survive long enough for a photo. It remains to be seen whether the rest makes it back home 🤤

The ability to update driving licence photos during the online renewal somehow makes the whole procedure worse. I've changed my shirt (twice), shaved, tidied up my hair, repositioned against multiple walls with different lighting... Surely the indecision will lessen after the 100th attempt 😶

Pastry practice is underway and going well. James Morton's sweet shortcrust recipe (used for these jam tarts) easily trounces Paul Hollywood's, which I found to be a little too savoury. 🧁🍽️
