As someone who hasn't eaten an egg or any part of a chicken in a year due to health issues, the egg panic I see flooding social channels is a little comical. I'm sorry you miss eggs, it's valid. But have you tried a tofu scramble? A chickpea flour omelet? Ground flax seed for baking?
