Fries and chips are firmly established as two different things in the UK. We have fries as you recognise them, and vinegar has no business on those. Chips, with increased heft and less inherent crispness, do not suffer from a good vinegaring.

Then Chips are divided between Chippy Chips (increast heft yet soggier) and Pub Chips (increast heft yet cripsier). Basically two entirely unrelated foods.
