I really should have taken mine out of the fridge earlier. I just hit 100f and it still has 23f to go.

I took mine out at 9am and its been going for coming up on 3h. Trying the Dutch oven method this year which is weird.

Mine was dry brining in the fridge since yesterday morning. Took it out at 1:30 and put it in the oven(250f) at 3:30. Once it hit 123f I’ll pull it and let it rest for 30min then toss it back in at 550f for maybe 20min to sear.
