That crumb looks amazing! Way better than my first loaf! I underproofed majorly lol. And Iβm pretty good at baking generally but sourdough is a whole other beast π
I feel like sourdough is the type of bread where you have to know the steps but also know how to make decisions purely based on vibes bc I ended up tossing my loaf in the oven WAY sooner since I was proofing it on the counter vs in the fridge π
