3 celery stalks
3 carrots
1 cup wild rice
Butterfly chicken. Cover with sage, herb provence, salt, pepper, garlic; and roast at 375f for 90 minutes.
Chop celery.
Add 3 quarts water to large pot and set to simmer.
Remove meat from chicken carcass and set aside.
Put carcass, onion, and celery into pot. Salt and pepper. Simmer for 1 hr.
Strain the liquid. This is your stock.
Chop the chicken meat and carrots.
Add chicken, rice, carrots, and all remaining stock to pot and simmer 45 minutes until carrots are soft.
Add parsley and serve with cornbread.
