The giant stone head is also visible in the distance in the EGA version of the deleted "trail" background leading up to the cannibal village (but was painted out of the equally unused VGA conversion).
The mountain view facing south where you push rocks to hit the banana tree (or your ship) is also called "vista-1" in the code, suggesting there might have been a cut "vista-2" facing north at one point.
Maybe the idea was the giant stone head would serve as a landmark: first being seen from afar in the view looking north from the mountain, then being something recognizable as the player approached the cannibal village, and then finally appearing in its gigantic glory inside the village walls.
Also, I wonder if the earlier cannibal village design for which fragments survive more closely resembled the small village layout seen in the EGA "trail" background.

Maybe so: there appears to be a large gray rock standing just north of the huts in the EGA "trail" room, similar to what looks like an enormous boulder with ropes tied around it (to hold victims of the cannibals? they did have a cooking pot, though) in the surviving bits of the early village design.
