My current goal is to get a local wedding industry client, so I can implement all my ideas and then hopefully show that information leads to a higher conversion rate.

You ever had a blind SEO lead come along thinking SEO was priced like some very dodgy offshore 'agency' email offer but their expectation was high end? Wedding related get this ALL THE TIME too. They absolutely need to talk details or every prospect thinks the bottom priced example does much more.
Now, of course you _could_ put a lot of focus on setting expectations, but that means your text now seems all negative, raining on their (literal) wedding parade, while all the ones that don't give prices focus on the bright, positive 'anything is possible' have your dream stuff...
There actually is one kind of client that can benefit from such a strategy - a leading brand. Brands always benefit when people have doubts and insecurities, dealing with too many unknowns, and so decide that even if a big brand isn't best, it can't have grown to a big brand if it was bad.
Florists, top design brands for wedding attire (like really top), and catering companies do tend to show at least guideline prices, and again, the big brands do well - especially if they introduce tiny nods to the cost of getting it wrong, or by mentioning 'reliability' to make you doubt, etc.
See I get where you're coming from and you make sense. but many venues don't give you anything other than all the fluff and a few pictures. It's v frustrating
On more than one occasion I've gone to other sites like hitched to just find out capacity, bar details, if there's in house caterers etc
Venues can be mixed. Some that have enough 'clout' to expect decorum can afford to give guideline pricing. However, there's always the chance that the wedding party may not be as anticipated, or priced for, has special needs, etc. So again, rather than mistaken underpricing in customer minds...
Remember, the price for the same room, hall or venue can vary greatly by seasonality, by whether you are doing a 'bundle' where they also get a slice of the food, drinks, entertainment, decoration, etc. completely changes their margins.
