The CPU has a maximum operating temperature and the CPU package temperature according to OpenHardwareMonitor is rocking back and forth over the maximum temperature point for about the last 15 minutes the game was running before the crash

Typical, overheating like that on modern CPUs leads to just slowdowns, as the cpu downclocks itself to lower its temperature. But I wouldn't be shocked if the engine is crashing when that happens.
But if you're dealing with overheating there, I'd suggest redoing your thermal paste on the cpu.
yeah i wonder if this is explicitly actually even just a cyberpunk 2077 no work good on your machine and fucks up a bunch of stuff, or it's a fan positioning problem? i've never built my own pc from scratch so i can't say
I wrote a reply way back mentioning CPU temperatures whenever you originally posted this image that I dug up - are your CPU cooler fans still mounted like this? I can't quite tell from the pic but there's a chance the fans on the cooler are mounted two different directions (blowing air in/out only)
Also if possible, could you take a quick video just showing the inside of the build, including all the fans? It would really help in determining if this is an airflow issue, or something else
