It turned out Monster can very quickly go from boiling down near the bottom of the pot to a syrup that bubbles over very quickly. I may need an angle grinder to remove some of the cremated Monster syrup on the ring but we have our syrup!

And now I'm wondering if you can get Monster syrup, in the same way you can get the other soft drink syrups that are used in fast food restaurants / pubs. Just a big ol' capri sun pouch which should be mixed with CO2 and water.

Now down to the dough. Trying to make my Monster syrup cookies vegan and gluten free, having never made vegan, gluten free cookies before certainly added to the challenge but I'm locked in now.

Did the syrup turn out to be a lot thicker than I thought it was going to be? Yes, yes it did! She thicc!

Luckily I bought a new electric mixer for my baking adventures, so despite it initially sucking all of the ingredients up into one giant spire, it turned out ok. I mean, it looks like cookie dough right?
