Nintendo has always prioritized gameplay over lore so it's not a huge shock. Though I think it sticks out a bit more with DK just because they've tended to be so straight forward that a linear timeline just worked without much explanation.

But yeah. I'm not stressing over it too much because it seemed pretty clear from the start that this game is just doing it's own thing, while trying to appease to both fans from the arcade and Country era.

Even then though, the DK series wasn't consistent with its own timeline / lore.
Example: they can't make up their minds on if Cranky is DK's father or grandfather.

My best guess is that at least most will be explained in the game in due time. We just have to be patient until they reveal the answers.
