I 100% feel the same. The timing of the attacks and combat in general in DS3 just feels close to perfect for me, but for Elden Ring, for some reason, they decided *every* attack should be a delayed, ridiculously looking animation designed to roll-catch the player. It sucks
All the attack patterns makes parrying feel completely non-viable unless you spend a lot of time on EVERY enemy, and that kinda sucks
I mean overall I liked ER but the non-stop flailing of enemies and general flow meant I'd take frequent breaks. Didn't even do the DLC, no motivation for it.

I dont think I've ever enjoyed a souls-esque game more, and the DLC announcement hooked me faster than any Elden Ring sequel/dlc announcement did.
