Genuine question: if I’ve never read a Pratchett book before, what’s a good one to start with? I’ve heard they don’t have to be read in any particular order.

If you like mysteries, awesome men, and dealing with corruption and prejudice: Guards Guards and the rest of the City Watch series. If you like pragmatic magic, awesome women, and playing with story-telling conventions: Wyrd Sisters and the rest of the Witches series.
Alternatively, if you *have* read and enjoy Neil Gaiman, you can start with Good Omens which they collaborated upon. It is an awesome Pratchett and Gaiman book, but it isn't a Discworld book.
My personal favorites are the Witches novels and the Industrial Revolution series, but you can pretty much start wherever something strikes your fancy.
Personally, I'd start with "Guards Guards!". It's the first of the city watch books, and introduces characters that appear in lots of the non-watch books. "Going Postal" is a good starter, but if you haven't read "Guards, Guards!", "Men at Arms" and "Feet of clay" I think you'd be missing context.
There's several series' within the series & those are better in order. I love reading the whole series in order - but, while first 2 are fun he really takes a leap in sophistication 6-7 books in. But if u don't want to start at first book, try Making Movies or Guards Guards!
