Beautiful loaves, but the crumb was a bit too dense and gummy, I always underproof lol. Will post pictures of the second loaf crumb later. Either way? Tasty.
Second loaf - definitely too dense but not inedible, and I think it was fairly close. Attempt two is autolysing on the counter and Iβm going to work with the aliquot method to ensure full bulk fermentation.
