Probably depends on how quickly Putin can rebuild his army. His 3 day War has destroyed most of what he inherited from the Soviet Union, so he’ll be starting over from scratch.
They need to literally pound an area to bits just to have a remote chance of taking it. And given the damage Ukraine has done to their orbat in terms of the equipment required to conduct a proper artillery storming, they aren't going to be able to repeat it anywhere else soon.

Does it have to be tanks rolling across the EU/NATO border, and even then, is there some gray area? Maybe, say, Latvia is expendable.

It's not that we're not prepared. We are. It's knowing how a zombie invasion will disrupt your life. That's a bummer.
They'll probably have to cut military spending a little to rein in inflation, but they'll probably keep the production rates up.
Russia's totalitarian turn is nearly complete. That'll take care of the recruitment issue.
Anybody who thinks they could fight NATO is delusional. (Even NATO minus the US, which is likely the future.)

Russia has put its economy on a war footing. So long as they can manage inflation, there's really no incentive to wind it down.
They're also supported by the axis powers (China, Iran, North Korea). That will help them rearm faster.
