I really want to read more Marvel comics but whenever I do something i need to do way too much of it so I’d have to do something stupid like reading every single comic ever with Moon Knight in it or some shit.

If you limit it to well-written Moon Knight comics there's only like four runs to worry about lol. The 2021 series by Jed Mackay is a good place to start if you haven't read MK before; it's great and currently ongoing at ~50 issues. After that the Moench, Ellis, and Lemire runs are also very good.
