Winter means leeks, and lately I've been splitting them lengthwise, dabbing them with some oil, and roasting them at fairly high heat. You get a super uneven cook, and a spectrum of leek flavors, from the sweeter interior to the sharper green and bitter charred ends. Chop, mix, and put on anything.
