Also, just side note: the water in Scotland is apparently special enough to warrant a particular Yorkshire blend made just for Scottish water (seriously), so none of these will taste quite exactly like it (but will still be very good).

Yes, apparently the blends created to release more tannins. If it’s the taste you’re after, you might be better off buying standard tea from the Indian store (Taj Mahal etc) which are usually blends of Assam and Darjeeling.
