I clearly need a hobby but I have ADHD, so my apartment already has supplies for sewing, knitting, painting, baking, 7-step skincare, letter writing, plus several large unbuilt Lego sets.

A friend of mine tries to make new hobbies of the supplies already acquired.
So in your case it might be learning how to sew dolls clothes, or creating stop-motion videos with the lego sets or maybe something else too!
What Lego sets do you have waiting for you? I have similar traits and have to be very strict with my builds, otherwise Lego can become a little too compulsive. Sometimes they are safer in the box (and take up way less space).
Collecting craft supplies IS is a valid hobby. It's certainly one that I excel at, as evidenced by craft supplies, books and not quite finished projects scattered around the house!
I guess I should pick one of these, since I already have the supplies. I used to be really, really good at baking but then people *expected* freshly made items whenever I showed up at parties and events, so I stopped making them.
