Finally made this tonight for my daughter and it was a hit. She doesn’t eat pork so I subbed butter, smoked paprika, and a bit of red miso paste for the missing bacon. Paired it with gluten-free cheddar biscuits that I just figured out how to make. 😋 Thank you for posting.
I am a soup influencer. 😜 This is my soup. I wanted to try to recreate a soup I had in Italy. Did I ever. So good. (I guess zuppa di ceci alla Toscana?)
Recipe:
4 cans of garbanzo beans
1 onion
2 cloves of garlic
1/2 small package of bacon (can leave out)
Zest of one lemon
Fresh spinach
Salt, pepper, cumin to taste
Olive oil to drizzle & dried pepperoncini to garnish
1. Drain two cans of beans & whiz up other two-beans & aquafaba. Set aside.
2. Chop & cook bacon with olive oil until you render the fat. Add salt, pepper & cumin to taste.
3. Add a diced onion & cook; add two minced garlic cloves & cook until fragrant.
4. Add whole garbanzos & sauté until buttery
4. Add chicken stock & scrape the bottom of the pot.
5. Add the rest of the garbanzo beans & add more chicken stock until it’s the right thickness for your taste.
6. Let simmer for 15 minutes. Add zest of one lemon & chopped up spinach.
7. Top with good olive oil & pepperoncini
I buy those box ones and I put about half in--I add a little at a time to check for consistency. I like my soup on the thicker side (which is why I whiz up 1/2 the garbanzo beans)
