I limit my red meat consumption and have gone longs stints without red meat, but it’s almost inescapable to where I can’t completely avoid it here in Texas, for better or worse.
When I used to travel to the Valley and along the Gulf for work (basically anyplace south of Fort Bend), I’d just order a friend chicken plate, eat the salad and fries, pronounce myself “stuffed” and take the chicken home to my dog. Way easier than explaining that I was vegetarian.
This was what I was going to suggest. Tex Mex is your best bet for a few consistent vegetarian options on a menu. Even in small towns you’ll find them on a menu.
