As we see in the case of Ukraine, the US will degrade or disable those weapons if they are to be used against Russia.
There's already the Eurofighter. The Gripen can't do anything the Eurofighter can't also do. The problem is that there is no 5th generation European fighter Jet available. FCAS and even the British Tempest program won't be ready for production for at least another decade.
Gripen only makes sense for countries like Denmark or Belgium to replace the F-16. We can either take the gamble and buy F-35s hoping the US at least honour their contracts or forgo 5th generation fighters altogether.
Unfortunately, Gripen has American engines...

For instance, mission data files that update new threats of enemy radars etc, could degrade mission operations, but can still fly
So for the basic systems as you asked, that's Lockheed Martin. But for the mission data files, that would need to come from US military sources, especially for smaller air forces that don't have AWACS or the SIGINT and ELINT to create those updated mission files. That's where the Pentagon comes in.
The F-35's wouldn't be useless, they could still fly, but with major disadvantages in high threat air space. The thing that could really ground the F-35's eventually would be the predictive maintenance systems being cut off or messed with, I guess there could be workarounds for that.
