We have! It wasn't ready in time for the Kickstarter unfortunately. The need to launch was now or never since most of the team has been unemployed long enough that they need real investment to continue development. I agree with you tho. I was extremely disappointed in the use of genAI...

if it's any consolation, they've been transparent about this and explained that they used AI as a last resort to pitch the game in time after an artist they were working with fell through, and have said that by launch all of the AI placeholders will be replaced with handmade textures

Many games are using KS to show their viability to VCs and publishers - if a game does well on KS, other bigger investors might be inclined to pitch in bigger amounts.
