I am curious, are you considering backup power for that outlet/circuit? Partial reason for why I didn’t complete my run due to common power blips and being tied to UPS.
I have a whole home surge protector and I can live with power blips so I'm not worried about backup power for this install. If I were to do something I would do it for the whole house, and since it's a new home there is a place to connect near the breaker box.
I went from a Dream Machine Pro SE to the much smaller, less capable, Cloud Gateway Ultra and just one U6 Pro AP. This works for me and hopefully I can keep things simple going forward.

make your own ethernet cable? Not really the whole cable but, cut it to length and put the plugs on. I'm pretty sure if you learned how to to a dry wall, you can learn that easily.
I learned how to make ethernet cables in the 90s. I ran and tested a few of the ethernet cables that are in the wall and terminated the inserts. In terms of making the patch cables it comes down buy vs build as some of the thin braided cables are so cheap it just doesn’t make sense to make them.
