I can happily report that the "Hide Google AI Overviews" Firefox add-on seems to be working very well and getting rid of all that AI slop from Google's search results. An identically-named extension is also available for Chrome, but I haven't tested it. - ThreadSky

Haven't tried this yet. In the meantime, putting -"fuck" at the end of a query in Google also scares off the AI.

Unfortunately Kagi also uses AI, and is a paid service which therefore links your personal details (provided at login & payment) with your searches

They can’t do it even with a court order
