A lot of industry people felt comfortable saying that stuff about how bad Demon's was in a way they had to walk back for the sequel. Hell, there was a bit of a revival of that when some AAA devs went off on how bad Elden Ring's UI was

i dont remember bad mouth on Demons Souls specifically. word of mouth hyped up the game....
however, Dark Souls being multiplat resulted in the 'Artificial Difficulty' debates. many claiming Difficulty was inherently outdated and every game should just be a movie😂
I think there's a place for movie-like games and gameplay driven experiences. Diversity is the fruit of the industry. But a lot of people seem to want to erase the thing they aren't into and that's always been odd to me. Like the "Grummz crowd" on Twitter.
i loved MGS4 despite half the game being cutscenes.... cus the cutscenes were all fun.
i wish that 'cinematic game' took from metal gear where the 'cinematic' aspect was just how theres cool movie cutscenes... rather than heavily scripted sequences.
I personally don't remember being personally bothered by ERs UI, but people did complain about it. Ubisoft comes to mind quick. I want to see the game, the world, not having UI pollution. Disappearing UI while exploring is cool, helps a lot imo
That's an even more complex topic, because I think it's clear that From's UIs are often intentionally obtuse or limited for very particular reasons. They aren't accomplishing the same thing as Horizon: Zero Dawn's UI at all

Also yeah I hated Horizons UI tbh, but I didn't like Horizon in general. Didn't click with it.
