One cheat brisket method I like is putting it on the offset smoker for 3-4 hours, getting that good smoke in it, wrapping it up, then putting it in the oven to finish. Save some wood and cant nobody tell the difference.

just gotta make sure you are happy with the bark before you do that. Also I like to put tallow on it at that point. I usually smoke the trimmings to get it
