Don't most apps simply include tracking in their pages long agreement box that users are required to click in order to use the app? Shopify is not doing anything different from what almost all apps do but merely failed to hide it in a long, legal document that users are required to give consent to.

This is good advice - you don't have to use an app for everything! Most businesses will let you do anything you need on their site, and you can customize your privacy settings in your browser.
