The seeded nodules have to be baked or boiled to extract the seed. They then can be used for sauces and savory dishes, bringing a sweet, tart and umami tone. The seeded ones can also make wine if mashed and left to ferment for two months and the juice skimmed off. This is why a bottle is expensive.
